Karate champion Vicky Panetsidou makes us Poke Bowls!
You've surely heard of the famous Asian Poke bowls. Easy, healthy and above all delicious dishes for those of you who love something different. It can also be made in a vegetarian friendly version with the appropriate adjustments!
For the recipe we will need:
Use quantities of your choice
- Shrimp
- Colorful quinoa
- Carrots, cut into julienne
- Avocado
- Corn
- Edamame (Asian soybeans)
- Cherry tomatoes
- Lime
- Soy sauce with less salt
- Poke bowl sauce
- Black sesame seeds
- Garlic
- Ginger
- Olive oil
- Salt, pepper
- Olive oil

Implementation:
Marinate the shrimp for 10 minutes with a little soy sauce, olive oil, garlic and ginger. Sauté them in a non-stick pan, over high heat until just browned. Boil the quinoa for about 10 minutes. Place all the ingredients in a deep plate and pour over the Poke bowl sauce, a little lemon juice and a little olive oil. Finally sprinkle with the black sesame seeds.
